End of the Season Slaw 

 

Try this wonderful refreshing salad or slaw for the end of the garden or end of the season.

We had this for lunch with The Power Team on Sept. 5.

Mix or match the following or anything else you might have. I will
tell you what I used and you can make yours based on what you have available. Just make sure as much as possible is organic and fresh.

"End of the Season Slaw"

Dice into small pieces:

Yellow and red tomatoes (cheery, grape and pear tomatoes work great) red onions, green onions cauliflower cucumbers broccoli cabbage cilantro parsley romaine leaves or spinach (thinly sliced) green bell pepper spinach celery kernel corn raw Jungle peanuts or raw cashews grapes or raisins.

Combine all the diced vegetables and mix with the dressing. My dressing was a combination of organic nonfat yogurt, Bragg's apple cider vinegar, hemp oil, dill (lots), pinch of oregano, salt and garlic. For sweetness I add a small amount of Grade B Maple Syrup.

I love this recipe because I can add or delete based on what is in the garden or in the fridge. You can substitute olive oil or flax oil. This is a great way to get your children (and husband) to eat many different vegetables. The added sweetness of the maple syrup is a great flavor. The best part is testing it until it
is done to taste.
